Ingredients
  

  • 12 mini phyllo dough shells (store-bought or homemade)
  • 6 oz goat cheese, softened
  • cup dried cranberries, chopped
  • 1 tbsp honey or maple syrup (Sweet Enhancer)
  • 1 tbsp balsamic glaze (Optional Sweet Enhancer)
  • 2 tbsp chopped nuts (walnuts, pecans, or almonds) (Crunchy Add-On)
  • 1 tbsp chopped pistachios (Optional Crunchy Add-On)
  • Fresh thyme or rosemary (optional, for garnish)

Instructions
 

  • -Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
    -In a mixing bowl, combine the softened goat cheese, chopped cranberries, and your sweetener of choice (honey or maple syrup). Mix until smooth and well combined.
    -Place phyllo shells on the prepared baking sheet.
    -Use a spoon or small scoop to fill each phyllo shell about three-quarters full with the goat cheese mixture.
    -Sprinkle chopped nuts (and pistachios if using) over the tops.
    -Bake for 10–12 minutes, or until the edges of the phyllo are golden brown.
    -Remove from the oven and let cool for 5 minutes. Drizzle with balsamic glaze and top with fresh herbs if desired.
    -Serve warm or at room temperature.
