Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • ¼ tsp salt
  • 1 cup kefir
  • 2 large eggs
  • ½ cup unsalted butter, melted
  • 1 tsp vanilla extract

Instructions

  • -Preheat your oven to 350°F (175°C). Grease and flour a 9x13-inch sheet cake pan.
-In a large bowl, whisk together kefir, melted butter, eggs, and vanilla extract until smooth.
-In a separate bowl, whisk together flour, sugar, baking powder, and salt.
-Gradually add the dry ingredients to the wet mixture, stirring just until combined.
-Pour the batter into the prepared pan and spread evenly.
-Bake for 25–30 minutes, or until the top is golden and a toothpick inserted into the center comes out clean.
-Let the cake cool in the pan for 10–15 minutes before removing or slicing.
-Optional: Dust with powdered sugar or top with a light glaze once cooled.

Notes

  • Don’t overmix the batter. Stir just until the ingredients are combined to keep the cake soft and fluffy.
  • Use room-temperature ingredients for best results — especially the kefir and eggs.
  • Check for doneness by inserting a toothpick into the center. If it comes out clean or with just a few moist crumbs, the cake is ready.
  • Let the cake rest in the pan for 10–15 minutes after baking to prevent it from breaking when removed.
  • Top it your way! This cake pairs well with powdered sugar, citrus glaze, fresh fruit, or even whipped cream.
  • Store leftovers in an airtight container at room temperature for up to 2 days, or refrigerate for longer freshness.
