Madeleine Variations

Ingredients
  

  • 2/3 cup all-purpose flour
  • 1/2 tbsp teaspoon baking powder
  • 1/2 cup unsalted butter (melted)
  • 2 large eggs
  • 1/2 cup granulated sugar
  • 1 tbsp vanilla extract
  • 1/4 tbsp salt

Instructions
 

  • Preheat the oven to 375°F (190°C). Grease a Madeleine pan.
    Mix dry ingredients – Whisk together the flour, baking powder, and salt.
    Beat eggs and sugar until pale and fluffy (about 3–5 minutes).
    Add melted butter and vanilla extract and gently mix.
    Fold in the flour mixture until just combined.Chill the batter for at least 1 hour to help create the signature hump.
    Fill the Madeleine molds about ¾ full.Bake for 10-12 minutes until golden brown.
    Cool on a wire rack before serving.
