Ingredients
  

  • 1 sheet puff pastry, thawed
  • 1 cup mushrooms, finely chopped
  • ½ cup goat cheese, crumbled
  • 1 tbsp mixed fresh herbs (e.g., thyme, rosemary, parsley)
  • Salt and pepper, to taste
  • 1 egg, beaten (for egg wash)

Instructions
 

  • -Preheat the oven to 400°F (200°C).
    -Sauté chopped mushrooms in a dry skillet over medium heat until most of the moisture evaporates, about 5–7 minutes. Season with salt, pepper, and herbs. Let cool.
    -Roll out the puff pastry on a lightly floured surface and cut into squares or rectangles.
    -Place a spoonful of the mushroom mixture and a few crumbles of goat cheese onto each piece of pastry.
    -Fold and seal edges as desired. Brush with egg wash.
    -Bake for 15–20 minutes, or until golden brown and puffed.
    -Let cool slightly before serving.

  • Make-ahead tip: You can assemble the pastries in advance and keep them in the refrigerator for up to 24 hours before baking.
  • Freezing instructions: Once baked and cooled, freeze the pastries in a single layer, then transfer to a container or bag. Label with the date and freeze for up to 2 months.
